Upside Down Plum Cake

I feel a sense of accomplishment today. I participated in my very first 7-day blogging challenge organized by Write Tribe. Today is the final day. I am really happy for having seen it through. If you need a positive, supportive blogging group, do check out Write Tribe!

But truth be told, it couldn’t have come on a worse week for me. My husband and toddler fell sick one after another. So I had two kids to take care of and neither of them went to school. So that cut into Mom’s writing time.

What did work for me however, was Write Tribe’s no-theme theme. I like that. I like the flexibility to write anything I want. The best part of the challenge is the connections I made. How wonderful is it to find your “tribe” who actually read your posts and comment on it! I’m going to miss that, but I hope they’ll stay in touch. Special thanks to Corinne Rodrigues for pushing me to do this.

So, since today is the last day, let’s end it with something sweet. Let us eat cake!

Is there anything better than summer plums? I’m like Phil Dunphy from Modern Family, sighing every time I bite into a plum. “I haven’t eaten a single bad plum this summer”. My daughter is perfectly happy to eat them straight out of the fruit bowl, but Mom just has to bake something. Did you notice my toddler’s tea set in the picture? Just so you know, she has styled this photo.

This upside down plum cake feeds my undying love for fruit desserts. The mild tartness of the plums combines perfectly with the sweet cake batter and the juice from the plums keeps the cake moist. It’s a melt-in-your-mouth perfection.

However, an upside down cake with purple plums isn’t very photogenic, is it? It looks a little burnt, but it’s just the purple skin of the plums. On second thoughts, I should have peeled them. But hey, it tastes great and it’s a cinch to make.

Here’s the recipe I followed – Bakingdom’s Plum Upside Down Cake . It’s just the perfect recipe. No frosting required. Just dust some confectioner’s sugar on top and it’s done.
