Sautéed Leek and Fennel Pasta
  1. Cook pasta in boiling, salted water till it is al dente.
  2. Reserve some of the cooking liquid.
  3. Drain and set aside.
  4. Heat olive oil in a skillet.
  5. When it shimmers, add the leeks and the garlic and a pinch of salt.
  6. Saute till leeks are tender.
  7. Add fennel slices and chili flakes and another pinch of salt.
  8. Saute till fennel is cooked through.
  9. Add marinara sauce and some of the cooking liquid.
  10. Add the rest of the salt and pepper.
  11. Add the drained pasta and let it cook in the sauce for a couple of minutes.
  12. Mix in some parmesan cheese and serve.
  13. Top it with some extra freshly grated parmesan cheese. You can never have too much cheese 🙂
