My toddler, M is a fruit lover. Particularly strawberries, but lately, apples are rising up her popularity charts. So I, being me, went out and bought about 1700 apples. Will I never learn? So far we’ve had apple and cranberry crumble, apple pie, Overnight Oats with apples and cinnamon and the latest are these fabulous Grated Apple cookies! I’m going bananas with apples, can you tell? 🙂

Grated Apple cookies are delicious! Fresh, crisp apples, cinnamon, sugar and butter – need I say more? The texture is unbelievable. They’re soft and gooey because the sugar draws out moisture from the apples and since they’re rolled in cinnamon sugar, they have a crunchy exterior.

This recipe uses a mix of all -purpose flour and wheat flour, which means, you can eat them for breakfast….if you’re the cookies for breakfast kinda person. Go on, I won’t judge!

The recipe I used is from Farm Fresh to you. Click Here for the recipe. I made a few minor changes to the recipe –

1. I used three Gala apples.
2. I added a 1/4 tsp cinnamon to the flour and also to coat the cookies.
3. I substituted the 1 cup of sugar with 3/4 cup sugar and 1/4 cup of brown sugar.
3. I skipped the nutmeg.

This recipe made me 28 cookies. This is a great, healthy dessert option for the holidays. And speaking of holidays, guess who’s off to Canada this week? This girl! It’s going to be a white Christmas! This is also going to be my first time in Alberta, which is going to be freezing cold but I’m looking forward to spending some quality time with family.
