So last week was an exhausting one. The husband and my daughter were both down with a terrible cold. How I got out of it unscathed is beyond me. But taking care of a sick child and a sick man is so tiring! But I’ve collected a good number of brownie points for taking care of them, enough to give me a nice long day at the mall or the spa by myself muhahaha!(i’m pretty sure all parents work on brownie point systems, don’t they?)

Anyway, i scoured the internet for soup recipes and eventually came back to the one I’ve made before and loved. Sanjeev Kapoor’s Lemon and Coriander Soup.

The photo isn’t great but the soup is delicious! I made it with a lemongrass broth. Here’s how I made the broth/stock –
2 lemongrass stalks – crushed
1 onion
6-8 cloves of garlic 
1-1.5 inch ginger
10-12 whole peppercorns
2 carrots
3-4 celery stalks
A handful of cilantro sprigs
I had some spinach lying around so I added that too.
3 -4 cups of water
Throw everything into the 4 cups of water and let it boil for about an hour. Strain it and voila! yummy lemongrass broth! 
Soup # 2 is a hearty, chunky soup. It’s a meal in itself. Ina Garten’s Lentil and Sausage soup minus the sausage, since I’m vegetarian.
I used a teaspoon of herbs de provence instead of thyme. It was just absolutely delicious. I love it even more because it’s a one pot meal and nobody loves a one pot meal more than I do 🙂 Some slices of crusty bread to sop up the soup and you’re good to go. 
We’re all recovered now and S leaves tonight  for China for eight full days (sob sob, but cha ching on brownie points ;)) It’s going to be just M and me so I have a feeling I’ll be making this soup a lot.
